In
a box of Black Tiger Shrimp some of the shells were thick and others
thin. Does this effect the quality?
Occasionally you may find shrimp that have paper
thin shells. These shrimp have “molted” shortly before
harvest. All shrimp are in a continuous cycle of molting as they
grow, meaning they are shedding their smaller shells for new thin shells
that harden until the next molt. Black Tiger Shrimp live in warm
water and grow quickly causing them to molt more often than other
species. There will be no noticeable quality difference in a thick
or thin shell Black Tiger.
