A
monkfish is by far the ugliest fish in the ocean. Until about
twelve years ago the monkfish was considered a junk fish and was
thrown overboard when it was caught in the net, however, it has now
moved up to a white tablecloth item. The meat is white,
sweet, boneless and similar in taste and texture to lobster meat
and is sometimes referred to as poor mans lobster. It can be
prepared on its own or chucked and used as an extender with lobster or
scallop meat, especially good in soups, stews and salads.
