How much product substituting really goes on
in the seafood business?
The
Department of Agriculture and Consumer Services in Florida
recently conducted a survey of 250 seafood counters at supermarkets
and fish markets and found that red snapper was the most widely
substituted species in the country. Over half the fish
inspected that were labeled as red snapper were in fact something else.
In foodservice the substituting is not quite as bad. Every now and
then you run into a box of pollock that was marked cod or perhaps a
changed box weight such as a 27 pound box marked with a black marker
changed to a 29 pound box, or a 21 pound box made into a 27 pound
box.
