The
amount of breading allowed on seafood is different than what
is allowed on meat patties. Meat patties such as breaded
hamburger, pork, chicken, etc., are allowed to be no more than 30
percent breading. On seafood the amount of breading is 50
percent.
If
you were going to test the difference between two breaded products
an easy way is to take a pound of each product being tested, making
sure it is frozen, and wash the breading off using cold running
water, then weigh the two products to see if they each weigh one
half pound. This is also a good way to compare breaded
shrimp.
