Gaping is a term used to describe the separation of
fish fillets. The fillet actually flakes apart. These
flakes, as they are called, are joined by a connective tissue.
When the fish first dies it is important not to handle the fish while it
is going through a period of "rigor." During this period the fish
stiffens and if it is handled these connective tissues will break
apart.
