NAMP 401 Fresh ham

The fresh ham is the hind leg of the hog sold with the bone in or boneless.  Sometimes referred to as a Pork BRT Ham Roast, Netted. For any piece of meat called a "ham" it must come off of the hind leg (even a turkey ham has to be made from the thigh and drumstick).

Sometime a fresh ham is referred to as a "green ham" meaning only that it has not been "cured" - like firewood that has not been seasoned is called "green."
