A pork "cushion" is a lean piece of meat removed
from the picnic. It can be used in any dish that requires lean
pork. The average weight is about half a pound. A whole
cushion can be removed from the side if it is cut all the way to the
bone. Excellent for cutlets and stew and the remainder of the
shoulder boned out for sausage.
