Why
is pork sometimes inconsistent?
Each
processing plant has certain specifications for their fresh pork loins,
pork butts, fresh hams, etc.
When buying on
price alone and continually switching from one packer to another to save
a few pennies you may end up with inconsistent quality due to the
different quality specifications. The best solution is to stay
with one packer and provide a consistent product for your
customers. Also, if any inconsistency does become obvious, you can
call the packer for assistence.
Each packer
has different advantages and disadvantages, different value added
products available such as special trim, boneless cuts, special
packaging, etc.
