Often referred to as a "Steamship Round", the #166B is fabricated from the #158
Beef Round, Primal. The tougher shank and heel portions are removed from the back of the
round, leaving a portion of the shank bone exposed.
The rump section of the round is removed from the front of the round. This allows the
round to be set upright on the table for easy slicing.
