What does it mean when someone referrs
to "green meat?"
Green meat
simply means it does not have sufficient age to be considered acceptable. For example, if
a box of inside rounds had a kill date of only one week prior to today's date, it would be
considered "green" until it had between 14 and 21 days age.
The term could have possibly come from a
term used when drying lumber. A board that is freshly cut from a tree has to dry for a
certain number of days before it should be used. Before it has completely dried it is
considered a "green" piece of wood.
